Drooling over a Perfect Penne Ala Arrabiata

Last year I spend the end of 2010 in Australia. I tried many new and delicious foods and one that I cant stop keep my mind off is the Italian food I had in Bondi Beach, Sydney. There were rows and rows of italian cafe's and a perfect one settles in mind. I did forget what it was called. But it was so delicious.

Back in Malaysia, the one Italian restaurant that is accessible through the shopping malls in my area are called Italiannies. Went there 2 times so I could relive the fantastic and delicious penne arrabiata. But to my dissapointment, it has to have the italian chef's touch.

So now I am googling a lot of recipe for a penne arrabiata. It is a traditional italian dish that many loves. But i love it definitely because of its spicyness. Arrabiata means angry. Its hot flaming chilly red sauce dish, its hot hot and HOT ly delicious..


Use a Penne Rigata the one with hollow tubes and lines on it. So if I could recreate my fondest delicious Arrabiata I have had.

My secret "exposed" recipe for The Most Amazing Perfecto Penne All'arrabiata is as below

Ingredients list: 500g Penne Rigata, Black Olives, Olive Oil, Extra Virgin Olive Oil, Fresh tomatoes, Tomato Puree,  Red Capsicum, Yellow Onion, Garlic, Fresh red Chilly, Chilly powder, Basil leaves.

Preparation:

1. Slice 15 whole black olives or as much as you want (I loveeee olives!)
2. Dice a large yellow onion
3. Dice all the fresh tomatoes, (3 or 4 large ones)
4. Dice the Red Capsicum  (1 Large)
5. Dice 3 cloves of garlic
6. Dice the fresh red chilly (4 large ones)

Boiling the Pasta Penne Rigata

1. Pour all the contents of 500g Pasta into a boiling pot.
2. Put water in, as instructions on the packaging
3. Put 1/2 Tablespoon Salt
4. Put in 1 Tablespoon Butter or Margerine
5. Secret **** Use a non strong smelling teabag and boil the pasta along with the tea water ****(You can opt out from using this if you wish) I just like it, Try using earlgrey tea. Havent tried it but salute you if you are adventurous enough.
6. Drain when ready.

Making the All'Arrabiata sauce ( Rawrrrr)

1. Turn the medium heat on the pan and pour the olive oil
2. Gently drop the garlic and onion into the pan
3. After they caramelized, put in the capsicum and chillies into the pan
4. After about 2 or 3 minutes insert the freshly diced tomatoes.
5. Throw in the sliced black olives into the pan
6. Stir well for a few minutes , add salt and pepper and red chilli flakes while at it.
7. Pour in the tomato puree, keep stirring for awhile.
8. Use 3/4 tablespoon of red hot chilli powder.

9. Add a dash of sugar, maybe 1/4 tablespoon, to elevate spicy salty into balance
10. After draining the pasta, insert the pasta into the pan and stir the sauces with the pasta.
11. Using your chopped Basil leaves throw it into the pan and you stir.
12. If you think it is ready, then it is ready to serve!

Take out your prettiest plates and decorate as you wish. You can use Parmesan or Pecorino cheese as garnish and some more chilli flakes if the heat is not enough. Choose any dry herbs to garnish at the top of the pasta like parsley or basil.

Drizzle a little Extra Virgin Olive Oil if you wish.

So this is what I am hoping to make as soon as I get to the grocery shop.
